Semolato Cappelli Fusilli are made from stone-ground ancient "Senatore Cappelli" durum semolina, selected by the Association of Ancient Grains in Tuscany. The wheat is transformed into semolina through stone milling and then crafted into pasta by Pastificio Chelucci using traditional methods and dried at low temperatures in static cells to preserve all the nutritional properties of the wheat.

Drying time:
The pasta is dried for 3 days (72 hours) at temperatures below 38°C in static cells.
